yes, and from the looks of the add-a-windows, it looks like it started life as a work van (they should have gotten smoothed over those creases-- they look tacky)

That was the original plan but its a balance of showing off a car or the pc product and a 4 door car is just to hard for a good demonstration of the pc. I have alot of the pc planned out and it will require people to sit back and enjoy the presentation.
Google my name if you need to know who I am.
The problem with a van is that it makes it look like you need a van to warehouse all the electronics.
Intel had a GREAT demo car at CES. It was a convertible SMART wrapped in Intel vinyl graphics. You can see it in the CES videos on the mp3car blog page. It was awesome for demos. Two people could sit in it and you could also stand outside and see it.
Another convertible I haven't seen much done with is the Honda S2000. That might be cooler than the Smart.

I agree - a vert with a dual screen setup where the second screen is in a kiosk outside the car that people can interact with while others can walk/stand around the car and watch would be more entertaining for all. I did something similar with my Mustang Vert at Phreaknik to rave reviews.
The kiosk would have the demo walkthru as a video running on the top or on a big screen and the car screen at waist level. Having a video of YOU walking the user thru would make it seem more realistic to the end user ala "video professor" vice scripted preprogrammed computer screens. Setting up the computer to run a specific short videos based on user input is simple and can be just as interactive as another computer screen. You can do all the same stuff you mentioned and include Fusion Brain for the windows and top (but your system would say "Sorry I can't close the roof right now, people are watching!)
You mentioned no engine management has impressed you yet, but the system could have a "system check" button that would go thru several screens relaying current status, i.e., "(showing OBDMPG screen)No codes are current, Engine RPM is zero, Coolant temp is 199 degrees, average MPG is 27.6, 125 miles remaining in tank; (showing Fusion/TPMS screen) Tire pressure and temps are nominal, Battery voltage is 14.6, Windows are open, Cabin Temp is 76 degrees, Outside temp is 80 degrees, CPU temp is 120 degrees, (showing weather screen) Todays forecast is cloudy and 85 degrees in Las Vegas Nevada; (showing Main screen) Systems check complete, now returning you to Audio player 'Nothing Better to Do by LeAnn Rimes." Then the video comes back on suggesting another function.
With one voice for the car and the tutorial as a video of you, the enduser immediately knows the difference. The vert just gets you the maximum exposure to the most viewers in the least amount of time.

OHHHHH, A convertible is a good idea. Open roof, so people can see all around.

I think an suv using an airbag suspension would be the best blend of sport/custom look with the space to create something awsome and still viewable...
A prime canidate would be a first generation 2 door s10 blazer (94 previous)
The back would leave room for a large custom, well w/e you want to put back there that can be viewed and interacted with from the back, and seen through the very large rear side glass. There is still plenty of room up front to do something crazy with minimal stock comoditys to incorperate into the build.
The air suspension can be monitored and controled via car pc as well, and would add a lot of exterior attraction to the car to bring an intrest to the interior... This will be a show car.
Something to think about... I dont know what kinda vehicle budget there is, but this seems to kind of combine the best of both worlds

edit: ^^ i like this, but there is still too much metal in the way for large groups to see what is going on in the car..
and now, my vote-- convertible/softtop van/suburban! most are body on frame, so you can really do anything you want to the body and fit a couple large tv's with no problems... and they have even more space to work with than a small car... though any convertible will do great.
according to my poor google skillz, a convertible suburban has never been done, though a couple smaller vans have gotten a sawzall to the rear...
Also another thing is what if the PC acts up, you wont be able to control the car and make the suspension go back up. I mean I belive in tricking out the car multimedia wise, but control important features like that is a No No, for me.
I think the convertible idea is a good one. You dont have to go with some small 2 seater. You can go with a large convertiable, like maybe a Chrysler Sebring (before they f%^ked up the design). That is large and roomy and open.
Here is an example, although I hate the body kit he has: http://www.cardomain.com/ride/3373230
