Has anyone done this yet? I was thinking in order to make this work you'd need an ipad condom of some sorts. Sure enough, there is a cover (Article in independent.co.uk) you can buy that was designed to allow you to use your ipad in the kitchen.
$20 for 25 covers on amazon. I'd imagine it's cheaper than a chart plotter and more versittle.
Does anyone have a 7" "sunlight readable" screen and a new ipad3? it would be interesting to see side by side comparisons.

The new iPad3 is no more sunlight-readable than the previous generation iPad. Those particular stats (brightness, white level, black level, contrast) have not changed...only the resolutions and pixel density.

Someone was telling me the retina display was better for sunlight readability. I haven't studied it yet but from a quick search - it just looks like it is a better reflective coating which probably isn't enough to make a display truly sunlight readable. A side by side comparison would be interesting none the less.
id asume since people will trust their lives on them and fly behind one as an efis display in an airplane it wouldn't be too bad in a boat. only thing different between the kitchen and out on a boat is salinity. it will kill almost any connector on the side of the ipad cover or not. marine garmins are notorious for the sd slot to become too corroded to use. and id asume the same for an ipad.
