I think i may be able to get an external sound card to do the trick too. Any suggestions on what brand I should get?
Hi i am installing a Mac Mini in my 2001 Eclipse and i need some way to run the audio out to my car amplifiers. I need a Toslink digital converter to 5.1 Analog RCA (6 RCA Plugs) and I cant seem to find this anywhere. Any suggestions?

You want to run TOSlink from onboard sound to an external soundcard and output 5.1 analog?
While that could be done, it apears to be a waste of money, time, and space.
You need a DAC, plain and simple. If you don't want to go that route, most sound hardware has the ability to output 5.1 natively.
I doubt you will find a 5.1 RCA output sound card with high enough voltage out to be worth a damn.
I would look at running an external processor like the Alpine 701. It will take tos-link in, and spit out 5.1 analog, with 4v outputs and you can finely tune your system with it as well.
