I'm sure the sound quality you will get out of that device will be fine. But without the actual specifications of it, I can't give you a real answer.
Those adapters are cheap enough that you can buy a few different ones and try them out to see which sounds best to you. Usually I go to radio shack for things like that.

Don't think it would affect the sound as long as its not too cheap.
I would pick this style personally

There's no cable runs so you shouldnt notice any difference in the quality. Should be okay.

The simplest IO controller you'll ever use!
Copper is copper, unless the adaptor you buy is so cheap that it's faulty out of the box, then you won't hear any difference.
I would recommend using a cabled jack to 2x RCA cable, as this won't put excess weight on the flimsy 3.5mm jack, whereas the above adaptor will, and thus, can shorten the life of the jack socket in whatever it is connecting to.
let's put it this way:
Your not going to notice any difference in quality if you used platinum contacts or copper contacts. Your in a car there will be plenty things masking the quality of the sound!
