You can group the tweeter and woofer into one channel if there are passive crossovers inbetween them. Is the 5th "speaker" (I guess you mean woofer) a center channel?
Does anyone know of a amp that will drive 2 tweeters, 5 speakers, and possiblely one sub?

well it depends on how you want to run your speakers. Are your tweeters part of a component set with passive crossovers? Do you want to loose sound qualitly and run speakers in 2ohm parrell?
i own an 2002 eclipse. The 5th speaker is located in my clock in the center of my dash.
just buy a second amp.

If you want to drive the tweeters seperate from the 'speakers' then you're going to have to go with multiple amps. I've never seen an 8 channel amp and if I did, I'd have to think its total crap.
Like the suggestions above, if you use a passive crossover (which is usually included with the tweeters) you could run 2 of your speakers and the 2 tweeters off of 2 channels. Then you'd only need a 6 channel amp. There are many amps marketed for exactly this purpose... 5 full range and 1 subwoofer channel.
