is the computer's sound card stereo or quadraphonic? if it's stereo youll probably need y adapters. as far as the 1/8" out you just need cable with an 1/8" stereophone connector.
I tried searching but this seems to be a hard one to pull any relevant threads up on due to wording...
My 2005.5 Jetta already has a nice 8-channel amp integrated into it and I would like to see if it can work with my pc...
but Im not sure how to go from an 1/8" Audio Out to the Speaker Wire or if it is even possible.
I need to go from the Audio Out jack to:
Left Front +-
Left Rear +-
Right Front +-
Right Rear +-

Its just a plain-jane audio out jack. So stereo.
If you could elaborate a bit that would be greatly appreciated. Especially concerning the connection of the + -. Im trying to go from the sound out stereophone jack to 8 wires.
I have a cable with a 1/8" Sterephone jack on one end and RCA red/white on the other. could I splice that and use it somehow?

Have a read of this - HOW TO: Get sound from PC to Car Stereo / Amp
The computer out has 3 wires - Left+, Right+, and Common-
Your amp apparently has 8 input wires - Front Left+, Front Left-, Front Right+, Front Right-, Rear Left+, Rear Left-, Rear Right+, and Rear Right-
Connect the Computer Left+ to the Amp Front Left+ and Rear Left+
Connect the Computer Right+ to the Amp Front Right+ and Rear Right+
Connect the Computer Common- to the Amp Front Left-, Front Right-, Rear Left-, and Rear Right-
All you are doing is splitting the output to each input.
In addition, you have may have to find connectors to suit. The cable you show is fine for the computer end, using the 1/8" Sterephone jack.

Well I went searching on RadioShack.com for the connector youre talking about... and got like 500 results. So Im not sure about that.
Also... could I just cut open the RCA ends of my 1/8-RCA cable and splice the wires in that way? (PS which is the (-) on the RCA? In or out)

yeah you can splice it. and the outside of the RCA is the GND.
but beware, if the wire is fiber than you could be in trouble.
