what year is your coupe, cause don't the '05+ cars have aluminum dashes? Mine is an '04, and I molded into it using the "acetone + legos" method.
also you might want to check that "double din dash." thats meant for '03 and '04 G's (dunno if they have an updated version for '05+, I haven't paid attention to the g35 club in a while). Also check out g35driver.com and those other sites sometimes. The club "NY Gsquad" or something may help you too, they have a bunch of smart guys that know this stuff.
As I said though, I haven't paid attention to this stuff in forever, so things may have changed.
