The resin will heat up the adhesive and make it let go of whatever it's supposed to hold onto. Your best bet is going to be to SOAK your mat with resin and wait until it starts to get tacky and then put it wherever you need.
Is it ok to use spray adhesive to hold the fiberglass mat in place while wetting it out? What I mean is like spray a wall or a ceiling with the stuff and then place your pieces of mat. When your ready lay on the thick goo (resin). Will this cause any problems with surface adhesion of another layer of fiberglass and resin on the other side once the mold is popped? Will it cause a problem with the resin curing properly? Or any other potential problems I can't think of at the moment?

I'd look into purchasing a roller for an application like this to help eliminate the possibility of air pockets as the mat starts to hang down from gravity.
