You could always get a decent webcam and add a small wide angle lens to it. That's what I did before.
I personally haven't bought mine yet, so no rwcomendations on the card. I just plan on getting something off ebay. I don't need super great quality in the recording. Just something I can use to play back if the need ever arose... Trafic incident or something.
Relays are pretty straight forward. There's a switched side, and a coil side. The switched side has an input pole, and two switched. 1 gets connected when the coil side of the relay "sees" power. The other gets a signal when the coil side is off.
Since the power levels of the video line will be rediculously low, just about any relay should work fine. Just go to radio shack and get a cheap one. They're usually 3-4 bucks...
Solder positive wire through the switched side of the relay, and just connect the negative wires together.

Yes, I had an engineering friend of mine add some fancy connection with a circuit to the webcam to output rca connectors. So it connects to both my computer and screen. I'll have to ask him how he did it.
