Turn Phase Linear UV8 Touch Screen to Input Device?

So I have a Phase Linear UV8 which is a cheaper 7" in-dash motorized touch screen. It doesn't have USB or Bluetooth connectivity. Although, it does have 2 AUX inputs (Composite RCA [red, white, yellow]). It has a RCA style "TFT Output" which I'm guessing is rear/headrest screens. And, it also has a RCA video input for the reverse camera.

It's already a touchscreen, but I couldn't find any way to use it to control my Macbook, since there is only video connections and no data (Serial, USB, or Bluetooth) connections. Would anyone know how I can go about doing this?

I was thinking of getting an RCA Video to USB adapter cable, and connecting the "TFT Output" along with a Touchscreen controller with driver to the computer. Does anyone know if this would work?

Is there perhaps any methods/hack to add USB, Serial, or Bluetooth functionality to the touch screen itself (I also have a Nokia N97 that I would like to be able to control through the car's touch screen interface).

I am pretty tech savvy, and would be able to follow any ideas/instructions in hardware modification if anybody has ideas.

Thanks for all the input in advance.

Have you taken a look at the Macbook output on the screen yet? You may find the quality to be so poor that it isn't worth it. I have a Mac Mini connected to my television and you can read anything below 14 point font on it.

It may be simpler, easier, and cheaper for you to purchase a touchscreen and controller and replace the touchscreen on your UV8 to control the Macbook.

Of course, you will lose the control of the UV8, but you will have to give that up anyways if you want to use the touchscreen.

Another possibility is, if you have an iPod Touch or iPhone, to run one of the remote apps on it that allow you to control your MacBook cursor. Bonus is that they come with a keyboard built in as well.
