Thanks Rob! I can't understand these digikey sheets when I read them. I guess 4PDT was what I should have been looking for. 4-Pole Double Throw .. makes sense...

Got the switch today so I went to Radio Shack, picked up my 12 RCA connectors and some wire and got to work!

They all work great (except for 1 loose connection). Can't wait to get my carputer up and running so I can use this bad boy.. sure beats my FM Modulator.. volume doesn't get kicked back and when i swap between computer and headunit, they sound identical in quality and volume.
In case anyone wants it, here's the diagram I made to visualize everything. Black wires are the audio signals and the colors are the grounds.

Keep in mind I am not using the headunit's speaker wires, but rather all my speakers are powered by 2 amps .. which is what allows this to work
