Well, since I don't actually have my PC mounted in the car yet, I can only speak from desktop experience. I'd guess mounting space and 12v power might be issues in the car. I do plan on running two drives in the car. I've got an 8GB for the OS and 20GB for MP3. 8GB is a bit much, but it's what I had.
Otherwise, I like the idea of running a small drive for the OS and programs, and load all the media onto the other disk. Upsides to that are being able to reformat if OS gets corrupted, without having to back up all your media. Also makes it a bit easier if you want to make changes.
Although, this can also be acheived by making two partitions on your drive. That's what I did with the wifes 80GB. 20GB for Windows, and the other 60GB for her games and images etc. When I need to do the bi-monthly (okay, not quite that ofter) reinstall of Win98, I just wipe the C Partition and reinstall Windows. Minimal backup required.
