OK, I've got the supply built, but what's the
PG wire for (I assume this is power good?).
Is this a signal from the PSU to motherboard or from motherboard to PSU?

PG is a signal from the PSU to the MB, telling the MB that everything is OK (all voltages are good and within regulation) and it's safe to boot.
You can tie this to +5V through a resistor (1k - 5k works fine) to "fake" the PG signal. Some motherboards won't boot without this tied high, while others don't seem to care either way.
