Auto off switch

I bought one of those DIY parallel relay controller boards and I'm looking for a solution to keep the device from turning on and off while windows boots. My plan is to find a switch that powers off and stays off until the button is depressed again. The problem is trying to explain what I'm looking for, because I'm not really sure what to call it or if it exists. So, here goes nothing:

The button will get power when the car is on. I turn on the switch after windows boots and go on about my way. Then when I turn off the car, the switch releases. So, the next time I get in the car, I wait until windows boots again and depress the switch to turn on the device.

It works sort of like a circuit breaker in your home. Once off it stays off until reset. Any ideas will be helpful. Even funny things that have nothing to do with what I'm looking for.

An amp delay-on thing maybe?

let the relays click away, just cut the power to whatever the relays are controling with an on-delay

Yep, I pretty much figured out a few terms I could search for after I posted this. I was sort of hoping that I could find a nice all in one switch/relay combo, but I'll just put together a push button and latching relay myself. Thanks for the help.
