Just ground the power supply (line from the ps case to the car chassis). I've been running plexi cases (and cardboard boxes) for years now and haven't had any problems.
I built an acrylic case for my CarPC and was wondering if I should run a seperate ground wire from each component to a common grounding point. Right now the only way the components are grounded is through the negative power wires coming from the PSU. Would adding an actual chassis ground between all of the components be a good thing or create ground loop problems?

I was wondering how is your acrylic case doing since your install ?
I also plan to build an acrylic case and put my PC in there and install it on my car....but i have some doubts.....will the acrylic case survive heat and would it melt or have any kind of fire issues since i guess its inflammable....
