99-04 ford mustang's have double dins
my SAAB 9000 has the equivalent of 4 DINs, and should be easy to mod.
Honda Accord 2002. The EX coupe has a double din... dunno about the other models.
almost all new chevy models 2000+ have double din openings
there are some exceptions i can't remember them
sadly my 99 monte is 1.5 Din but thats just enough
99-01 (i think its o1) have 2 din, but not double din, and arent the others din + 1/2? or are they actual double din

My sister has a 1994 Subaru Impreza car that has a double-din opening. I'm pretty sure the new Subaru's do too.
