3 way offers more range. Like Low Mid & High. Where two way might only offer Low and High, or Mid and High.

2 way separates only high from low.
3 way offers separation to: high, mid and low. The mid is often known as "bandpass"
The 3 way can also act as a 2 way.
I assume you are talking about an electric (active) crossover. Be careful that you set the crossover points within the acceptable range for your speakers.
