Well. If you video card has several outputs then yes you could have 3 different images. If it's a hub(ie, it splits the image over multiple outputs) then it would be the exact same image.

Now.. As far as the USB goes I have absolutely no idea. Windows is not built for multimouse.

It will basically be clicking on the first screen wherever you click nomatter how many touchscreens without special software.

So you can have multiple images, but only 1 "mouse"

but can the "mouse" be active whether i touch screen one or screen two or screen 3.

Example: can either of the two rear seat passengers use the car-puter via the touch screens in the headrests or can only the driver use it via the main screen in the dash?

It probably will cause no problems. However, the TS just know the position of the click based on the "desktop" If the screens have different reolutions, then the "positions" and images will be in different places for the screens, so, when you push the play button in back, it might be the stop button on the "desktop"

I don't how the TS drivers can handle it, but I think windows can handle several "mice". I have both a mouse and a digitizer for graphics work, which, i guess, is similar in function to a TS. I can use both simultaneously (to absolutely no practical advantage, of course), but both works.

Most touch screen software will support multiple monitors. You can use this feature with either extended desktop, or clone mode.
You should use a video card that supports multiple monitors to acheive the best results.
Depending on your video setup, you may be able to display 2 diferent resolutions, and still calibrate each touch panel seperately so that if you are useing a clone setup, a touch on one will be on the same spot you intend, no matter the resolution of the other. The drivers treat 2 touch screens as 1 big one when you have multiple display enabled. So basically it acts like 1 touch screen would, just across a much larger area. You still calibrate each one seperately.

I have an itx board running a 1280x1024 17" lcd desktop monitor and a 15" 1024x768 lcd panel off the lvds port. Both have touch panels, and both are obviously calibrated differently. No matter if I use clone or extended desktop, the touch panels are acurate on either display.

I also have a desktop pc with a dual display video card running 2 15" industrial lcd touch screens. Both set at 1024x768, with the video set for extended desktop. Again, no touch screen issues.

If you can get the computer to recognize the multiple touchscreen inputs, i think it will handle it fine. I have had a usb mouse and a wacom attached to my laptop at the same time, and both worked, as well as the built in touch pad.
