You could always fabricate a drawer with smoked plexi to mount it to.
Also, I'm trying to find a backlit, small, keyboard. IE: not unlike the ones we had in our old cruisers before we switched to mobile solutions.
I like the keyboard that I got for the simple fact that it's got a mouse pointer with it. It's got a pretty small foot print and it's wireless. Only drawback I can think of is that it's IR. Still works perfectly for me.

Small, hotkeys and a joystick.
I was thinking about a place to mount a keyboard and this idea struck me.
Since this keyboard is only about 1.1" tall and 5.6" wide I think it might be possible to mount it on a track and swivel. Provided you have the depth in the dashboard it'd a space-saving, and slick solution.
