I'm looking to do the same thing again but on a budget for sure. I have a vga touchscreen flip up in the dash still and I need a simple setup to run centrafuse and do gps. I will also need a power supply and startup/shutdown controller.
I was thinking of maybe doing an asus eee pc 7" laptop. I am not sure so I'm looking for some suggestions.
I don't want to get too crazy with money and I don't want 30lbs of wires and such as it's my toy and I'm trying to keep it on the "lighter" side.

Why not a Nettop? Look at the thread started by the guy with the Isuzu, he uses a cheap 12V laptop power supply with no problems.

He is using the asus eee box which is like $300+. I was looking at the 7" asus eee pc laptop which is $149.

I am really open to anything as long as it's cost effective. I have the expensive part which was the screen so all I need is a pc and power supply.
