smaller screen using VGA?

I am needing 3 5" to 5.5" VGA screens. (min. of 640-480 res) anything out there like that?

NO. (well, I don't know one yet).
The only one you can possible do is modded a PSOne screen by Sony. It's a very good screen (I used it). To make it work there are 2 options.
- Get a Arcade video card. This type of card work on 30Hz whereas standard VGA card work on 60Hz.
- Get a VGA card that allow custom resolution (Matrox, nVidia, some ATI) and PowerStrip.

Do a little search on PSOne and you have more option.

So, can the PSONE be hacked to do VGA?

The problem with PSONE : the physical resolution is not VGA at all. Somewhere 480x234 or so. And it needs interlaced signal.
You have to use PowerStrip, that is not free.
You have to use csync instead of vsync and hsync (one or two transistors and some resistor could solve this).
I do not think the brightness of a PSONE is enough in a car.
