matrox parhelia does 3 monitor outputs... or you could use multipe pci graphics cards and a recent os
If you're talking about character/graphical (not vga) displays, then:
Matrix Orbital LCD's support I2C (127 displays at once!)
Requires custom code, but it isn't difficult.
If the prices of MO's scare you, try searching for other lcd's. I2C is an industry standard, so there are bound to be more.

the reason that i was wondering is because i found some 2 inch color lcds with rca input. and they were only like 30 bucks a peice. i was thinking of geting two of those and positioning them side by side for an ultra wide screen to display track/ song info / visualizations. similar to some of the new sony head units. I want it to fit in a din slot. and then still have another larger display for viewing movies / gps. If this could be done i think it would be very cool. no need for character lcd plugins or software. i could just use object desktop to display the info i wanted on the small screens. it might be a long shot, but its just an idea i had.
OK - BIIIIG difference. You're asking this question: How can I hook up 3 RCA-in TFT LCD's? And the answer is this: you'll need to setup a 3 monitor multi-monitor display setup on the carPC you're building, and you'll need all three of those video outs to output TV. So you can either: get 3 PCI cards with TV out, or get "Scan Convertors" which convert VGA to composite - or any combinaiton of the three. It's going to be expensive no matter what.
does it make a difference what kind of video cards i use? do they all have to be the same performane or brand? gpu? or can i slap any combination i want in there and have it work seemlessly like i want it to. what about running different resolutions on the different cards, can i do that if i so choose? I have never set up a multiple display system so any advice would be great.
hrmmm, well i would try to use all the same card - just for ease of use. try picking up some mid-range (8mb) cards (not because of the memory, but because cards of that era should work nicely with multiple monitor) yes, you can run multiple resolutions on all the monitors. I think multi-monitor support started with win98. you can control a good number if i remember correctly. Now, for outputing to the tv... that is rather specific on the driver side, so I would STRONGLY reccomend using scan convertors. Dennisk has some on ebay at the moment for $20.
oh yea, where can you get 2" lcds for $30?
sony makes them. every now and then there are raw sreens on ebay. last time i checked (about a week ago) they were going for about 30 bucks. you can get them with enclosures too, but they cost a little more. i just wanted to know if my idea would work before i went to the trouble of getting some screens.
