You could use an UMPC.
Some of them have 1024x600 resolution.
But for standalone screens, the market for higher resolution just isn't there!
Three cars and a job since I first joined here, I'm finally in the position to start building a PC in my car. The problem I'm having is finding a display I'm happy with. There are now a few with DVI connections, so that issue is gone, but my biggest concern is crappy resolution. 840 or 848x480 is just not great. Thanks to the IP phone on my desk, my laptop, and my iPhone I'm used to very fine dot pitches and high resolutions on small screens. With that in mind, I'm looking for something in the 1280x720 or 1280x800 ranges that would still fit in a double-DIN mount. A touch screen isn't mandatory between my steering wheel controls and the spinner knob I intend to add, but it would be nice.
Are there any options for people like me, or will I just have to deal with 480p for a few years and upgrade down the line?

Unfortunately that's not really an option. I've already pretty much decided that the computer powering my rig will be a Mac Mini. Also it doesn't make any sense to half-*** it, if I can't do full 720p I'll just buy a standard Lilliput or similar and wait for the market to catch up.
Two years ago 480p was the standard for sub-$1000 projectors, now there's no reason to buy anything less than 720p. Hopefully the same will apply for in-dash LCDs.

I don't really see the need for higher resolution screens. You're sitting at least a couple feet away from the screen, so unless you have 20/10 vision you wouldn't be able to tell the difference.
I don't think DVI is really needed either at such a low resolution.
I have only seen this on a prototype level, don't think you will have any option below 12-13 inch laptop screens when going for ~HD resolutions, that being said, maybe this panel is actually available now, sometime after this announcement.

The difference is that projectors' screens are at least 72", and you can easily tell the difference between 480p and 720p. (I personally have a 480p projector and a 768p projector, on a 80" screen, and can very easily tell the difference.)
But with a 7" screen... I really don't think you will be able to unless your eyes are only 1 foot away at most. Of course unless you want to cramp as much text in as possible (i.e. UMPCs), in which case higher resolution would be useful.
I personally would rather see more sunlight readable screens than high resolution screens.
EDIT: Saying that, I guess we'll probably see 10 inch 1024x600 in the near future. Because at 10" you can easily tell the difference between 800x480 and 1024x600.

I build my own projectors and I use 10.6" Samsung 1280x768 panels.
With the panel and controller the kit costs around $350.
I was going to use one in my Yukon but couldn't figure out how to get a touchscreen for it.

Play around with an iPhone or one of the VGA Windows Mobile devices. Even on those small screens, the increased resolution makes it look so much better. Text is clearer, images are sharper, etc.
When I can look at anti-aliased text and not see pixels, that's when the resolution is high enough. For a 7" screen at 3-4 feet, 480p is not enough. TVs can get away with lower resolutions (in terms of DPI) because text and static images are rare. A car PC is built around text and static images, thus the experience benefits significantly from increased resolution.
As for DVI, true it's not needed even at 720p, but it's more resistant to interference and cheaper to implement than VGA. Given a digital source driving a digital display, why would I ever want an analog cable linking them? VGA interfaces on LCDs in general are silly now that even cheap computers have been coming with DVI interfaces for a few years. The only reason LCDs ever had them is for compatibility with VGA-only computers.
What I'm looking to be able to have is pretty much the iPhone experience. Nice crisp graphics, good interface, and clear web browsing. Front Row on a 720p LCD with a browser plugin is very close to that ideal. Web browsing on 480 is pointless.

Looks like there is a nice 1280x768 , 8.9" laptop lcd out now in the new HP Mini-Note 2133.
Might be able to get it and use a 9" touchscreen with it. : Of course with a proper controller card

I just bought a 400nit 500:1cr , 10.4" 1024x768 screen.
The wonderful thing about it is that it has a 180 degree viewing angle left/right/up/down. This thing can be viewed from anywhere with the same view as if you were sitting right in front of it.
Being a 10.4" you can get touchscreens for it for around $125 if you need to add one.
Not quite high def but darn close to 720p
I will post a thread about it with comparisons to my 10.4" Shark screen when it gets here this week
