That is what you need. The only issue you might have is whether or not the touchscreen fits on under the bezel.
I apologise if this has been answered already, but could the following:

be used to convert a 7" non-touch monitor into a touchscreen?! If not, is there a way to do this (save some money by making your own) or is it best to buy a screen with the touch feature built in?

Does anybody know of any thin touchscreen film (or similar) technology that could be used as an overlay over existing LCD? The thinnest I found so far are 2mm glass/plastic devices - they won't fit between the existing car LCD display and the plastic basel. I want to add touchscreen functionality to the existing original car screen.
Thanks
2mm is pretty thin, but touchscreens are glass and therefore rigid. I don't know of any touch films, other than the ones they apply to the glass when they manufacture the touchscreen itself. I'd think that would be pretty hard to source.
Have you removed the dash section to see if maybe it isn't just a matter of loosening some screws or modding the existing bezel to get the 2mm you need?
