I think the biggest many people could fit is an 8". I haven't seen a lot of headrests that'll support a 9" but I guess it's possible.
I would be interested in a 7" headrest. Do you have any other sizes in mind? Maybe like an 8" or 9"? I'm not all that fond of iPads in my car. I know there are those who do like them but I just want to provide video for the rear passengers.

How much is just the screen with capacitive touch screen going to run?

I'm looking for your 7" LCD with a bracket/cup that can be hard mounted into the headrest like the first picture.
See this one here, it has like a cup type thing that comes with it for mounting into a headrest.

Not remotely interested in something that just clips on.
So you need to mount the monitor to the headrest yourself? it doesn`t look like a easy remodel
If so, we have something similar for sale now:

Yeah, I've seen that but it has no mounting bracket for a headrest to make it look clean. Could even be a separate case all together that just has the mounting flange for headrest mounting sort of built into it. It's something I've been looking for and unable to find much other then the MiniTouch 700.
Couple of questions:
1) Does the capacitive screen have any sort of anti-glare/anti-reflection properties to it?
2) What is the mounting like for the control board to the back of the LCD panel? I'm really interested in a screen where the mental frame encasing the LCD panels and glass also serves as a mounting base for the control board. Every other "bare" LCD I've played with has had really flimsy plastic mounting or <gasp> double stick tape.
Thanks.
