I think a lot more people would use Linux, but for the lack of good GPS software. Drivers are also harder to come by, usually a lot further behind windows drivers.
On the other hand in it's favour Linux can be built to boot very quickly, and is a lot more stable.
So for now Windows XP is the OS of choice for most carPC'ers.

i use my own distro i made from slackware 9.0. Its pretty much slackware just a few added packages and also only loads certain services and a custom kernel so the boot is very fast.
I just use a old compaq mobo and power it with an inverter.
