First off, the plan is getting a skyline GTR32 for my work everythings all good to go, we are just waiting. So I've been piecing together a system and I came up with this cool idea. It involves 4 screens though, of different sizes. I figure 2 7" and 2 smaller ones or 3 7" and 1 smaller one. All of them are gonna be upfront. 1 For winamp, 1 for GPS 1 for the desktop with icons on it (load GPS, EQ etc, all the settings) and the 4th small one for displaying things like the time, date etc.
Planning on xp pro as the OS. It capable of 4 right? All the other ones AFAIK could anyways. (I saw a flight sim 2003 with 16 monitors once)
Anyways, what are some good screens? Ive dealt with the 7" lilliput I got from mp3car.com and I liked it, probably going with 2(3) of those.Maybe an 8" screen, but I need the car to measure the FG dash placement.
What about a small screen? Something 4.5" or 4" square? Something to hold 9 icons maybe, readible font size and the like.

Sounds like quite the undertaking.
Windows can handle a whole pile of screens, but you're going to need multiple video cards (or multiple-headed card[s]) to handle them.
You might consider PDAs for the smaller screens. You can get software that makes them act like another monitor on your main comp, and they have touchscreens to boot. I don't know if you can set up multiple PDAs in this fashion though.
