I was out and about last night, and I came across this thing at best buy. It HAD to be mispriced at $9.99, but I jumped on it.

I know its not the same thing as the PSOne screen, but I had to give it a shot for the $$. Does anyone think it will work as a monitor, I'd have to get some kind of adapter though, the screen it self plugs into the base - the screen has a 5 pin male circular plug, orientated like this

the base has a cord that plugs into it, one end is a typical playstation 2 audio/video plug. The other, a 3mm mini-jack. Anyone know an adapter that will allow me to plug this into a PC?

Chances are this is composite or possibly S-Video. In that case if your PC has a TV-Out on it then this should be no problem at all. Hoverer is you want to use VGA then your in trouble as the PS2 doesn't support native VGA
There'll be composite in there no doubt, but you will have a tough time getting VGA out of it. I know the PSOne screen have VGA, but I had a nightmare setting mine up.
Any chance you can post a pic of the cable with the jack?
it could work if it can be hacked like the PSone screen. the resolution may be high enough and it may be worth reading up on the psone hacks to see if it can be applied to this screen.
