take a look at gtkpod, particularely at libgpod - you'll be able to extract playlists,artists,titles and filenames from there and then play with whatever player plays mp3,aac since the files are stored in one of the F[00..15] directories. you can mount the iPod with the scsi-disk and ohci1394 modules.
