sorry for the noob questions everyone
I'm pretty sure you can just install windows only on the intel mac. You may need the leopard drivers though. I think a few people have done this.

Not if you run Parallels or VMWare fusion.

Yep, just pop a windows disk in and install away. The drivers off the leopard disk are pretty much a necessity. Although you can hunt down all the drivers off the disk for free if you wanted to.

yeah you may have been thinking about virtual PC for running windows on PPC macs. the reason parallels and fusion only run on intel macs is because they are simply virtual machines not emulators. Virtual PC (which only runs on PPC macs) on the other hand will translate the x86 instructions to PPC ones which is extremely slow. Best to just get an intel one and boot windows natively unless you want to use a Mac FE.

I relocated my head unit ... and you are ABSOLUTELY correct! It is a lot of work to do it well (I hired the job out and it cost $$$). I ran the Mac Mini's audio through the head unit's AUX port. Audiophiles will cringe, but I think it sounds great (I'm one of those weirdos who think their stock audio system sounds awesome. It's certainly not for everyone, though.

isn't there a way for me just to wire the speakers to the headunit and also have great sound quality from the aux or an alternative from the carputer?

As long as you don't pick up any ground loops or other noise it should sound pretty good. And ultimately if it sounds good to you that's all that really matters.
