If you don't mind both headrests showing the same thing....then yes but no guarantee about picture quality with a setup like that

Great! Thanks for all the help Justchat_1 and Bugbyte. I am worried about the picture quality.. The shortest cable that I found so far for the s-video to composite is that 6 ft one.. obviously I will not need that much cable.
I dont mind both the headrests showing the same thing.. it will be showing videos for the kiddos in the back.. as long as i can extend the desktop to those 2 screens..so I can do other stuff on the touchscreen in the front.
This is the only thing that I can really think of with the pre-built computer. Other than this, I would have to build a bigger system so I can utilize that video card with the composite out. My inspiration about the headset monitors and that video card was this thread (2005 Nissan Altima Carputer)
but he obviously was using a bigger system.
I may think of another system I can build that will let me use that video card (and hopefully cut back on the chances of interference), but I do want to keep costs as low as I can.
Is there any way that I can shield the cable even more than it already is? (the composite cable)
You'll be fine. If you get interference, you can use higher quality cable.
