If you can get your PC video to a composite signal, then yes.
Mind you, the display will NOT be crystal-clear, particularly with text and the display will likely be fuzzy and/or grainy. Your display resolution will also be limited.

Well with a frontend and perhaps a 6.5" touch overlay, you could make it useable. 6.5" is actually the perfect double din size. Meaning all those aftermarket units with touchscreens will use the correct overlay. So if you find a broken one on eBay or an overlay for one, justmake sure you see 4 or 5 wires coming off of it, and you can buy a USB controller for it.
