Find laptop the touchpad came with, reconnect, use this as carputer. Ha ha.

But seriously, this is probably more advanced than a "noob" project, and may or may not depend on the touchpad you're using. Synaptics toucpads tend to be pretty ubiquitous. These touchpads use the PS/2 protocol so if you do you're own wiring you can hook it up to a PS/2 connector. Here's a link to the developer support doc, pin-outs are on page 27.

Cirque and Alps (which rebrands Cirque) are other providers. Pin-outs which though they are probably similar, could not be found (by me) on their websites.

I have a touchpad made by Fellowes that I got at Target for $20 a few years back. Plugs into PS/2. They do exist as standalones, you just need to find them.

Also, many of the touchpads i've seen use those plastic 'ribbon' cables that are a pain to work with..

I agree, find a stand alone and save the headache. you can find them pretty cheap on ebay. just do a search for "Fellowes touch" or "glidepoint" IMO the glidepoint is small and easier to mount.

Amen to that! The fellowes was a bit of a pain..ended up using an old mount from a cellphone handsfree kit and using double-sided adhesive tape to mount it to that! Not elegant, but from the front, it works. it's mounted on the right side of the dash, under my XM MiFi
