One thing you didn't mention is the CPU.
CPU is vitally important because that's a huge factor in how much power teh system draws.
The PSU you specified (PW-200M) does not provide regulated 12v. So as your car's power output fluctuates (typically between 10v and 18v), so will the power to the motherboard. I the power drops below a certain point, the motherboard sill shut off or the system will crash. If the power is too high, you'll fry your motherboard and/or CPU. In order to have this PSU work with a vehicle PC, you need a voltage regulator, like the Carnetix units that are available in the mp3car.com store.
Personally, i'd go with an all-in-one solution like the M-series or an Opus model. They regulate the 12v rail, have battery protection, a startup/shutdown controller and other features as well. The issue with those units is spec'ing a system to fit with in the power constraints of DC-DC PSUs.
You are looking at a 1.8" HDD. Nothing wrong with that, but you can save a few bucks by going with a 2.5" HDD of the same capacity.
