I think a reason why you haven't found any satisfactory answers with a search is because your questions are very specific to your needs and your setup.
- "do i just run a s-video cord to the in-dash screen?"
Well, does your in dash screen take s-video inputs? Are you just going to look at pretty visualisations or read text? If you want to read text, maybe you'll want VGA instead of s-video or composite.
- "do i just use a power inverter to power the laptop?"
Sure if you want. You have to get power to your laptop somehow. I'm assuming your laptop will probably need somwhere around 19v (i'm too lazy to check if that is true, and you should doublecheck it yourself anyways). You can go with an inverter, which means you end up converting 12v DC -> 120v AC -> 19v DC, or you can try to find a DC-DC converter and just do 12v DC -> 19v DC directly. It's a compromise between efficiency and price. You choose which is more important to you.
- "What do I use to hook up the indash screen to my stock speakers?"
I assume you mean your laptop to the speakers since a screen only does video by definition. Depends. Does your amp or head unit take auxiliary input? If not, maybe you need to look into aftermarket amps or cut into your exisiting wires.
- "Do I need an extra amp to power the speakers?"
Are you keeping your factory amp? If yes, then maybe stock is enough and an extra is not needed.
- "What will control the speakers?"
What do you mean? You mean powering them? That's the amp. You mean the signal? What do you want as the signal? Your head unit? Your laptop? An iPod? You get to choose here.
Most of these questions are really only answerable by you since it's your setup.
