Oh, there's no doubt you could get around this issue. In fact, one of the popular car interfaces, CarBot, doesn't use a screen at all. Simply for playing audio (I don't know how you plan on watching videos w/o a screen) all you need is basically a pentium 2 running DOS with an MP3 player such as DAMP. That would give you a setup that boots nearly instantly, plays your audio as soon as it boots up, and lets you switch between files on command. If you wanted to get fancy, you could use another OS with speech recognition and such, but that's for another day.
