    Auto - Inclines

Why is it sometimes difficult to shift out of PARK (P) when I am parked on a hill?

This is called "torque lock." To prevent torque lock, set the parking brake and then shift into PARK (P) as you are parking. When you are ready to drive, move the shift lever out of PARK (P) before you release the parking brake. See "Shifting Into PARK" in your Owner's Manual for more information.
Edit: Last year my wife's car (automatic) failed state inspection because of the parking brake (handbrake/e-brake) didn't fully engage on the first click, has about 7-8 settings. I tried to explain to the Jiffy Idiot how a handbrake works, but he refused to pass me. He then explained to me how I should always set the parking brake with or without incline. I took the car to the dealership for state inspection and told them my story, everybody in the shop was rolling. The dealership shop told me the only time I should worry is on a incline to prevent torque lock.

auto: almost always (depending on weather)
manual: always in gear / usually with ebrake (depending on weather)

By wheather i mean outside temperature/season. Ever left your car outside with ebrake on during the winter? And next morning found yourself grinding your teeth as you have sweet cracking sounds when you start to move, aka your brakes frozen to the discs? Mmmmm yeah.
