What are the reasons for using Windows Embedded?

Is it just to minimize memory, CPU or disk space requirements?

If that's the case, it would seem that a system based on something like an Intel i3 or Atom or AMD Fusion platform and several gigabytes of memory would have minimal need for such an OS.

I tried it, no need for it, just use normal edition.
But i think the reason for it is space, but not much difference..

Windows Embedded is designed for embedded systems where the config can be locked down to prevent adding additional functionality, drivers, devices.
Have you looked in the FAQ yet?
    How about the Wiki?
