Just from looking at the datasheet I'd say that the output ground is almost certainly not connected to the chassis, so yes you would need to run the ground back to the power supply.
I got everything wired today and took a test run of the PC in my car. The PC worked fine, but none of my monitors have power.
I am using the Meanwell SD-50a-12 for them. Here is the data sheet for it.
I think I may know the problem but would like a second opinion. The guy that ran my wires for the monitors ran power cable to the back, but grounds them to the chasis near the monitors. Can anyone tell if that power supply would require the ground wire for the monitor to be run back to the power supply itself?
I will be troubleshooting this tomorrow.

Neat looking unit btw, how much did you get it for? Could do with something like it for USB hub etc.
