I'd go with a better sound card if you are going to compete. I have a chaintech card with optical in/out, it does the job but the sound quality isn't exactly ideal.

it really wasn't that difficult to make the box as it is out of wood.
The main reason....that box has to be bolted to the car, I know that fiberglass is strong, but I don't trust it to be strong enough to run a few bolts through and mount it to the frame of the car...

My problem with some of the Sound Blaster external cards is that I don't need all of the extra crap that they come with, and that with the optical ports being on the front, and all the knobs, etc. If i could find another sound card with an optic out, that's not as tall, I would be all over it.

Those brackets are isolated with rubber grommits on the top and bottom, and if I can find some longer screws for the hard drive it's self then i will do the same there....
the motherboard is mounted in the same way, only it has springs as well as rubber bushings

that's about the only external card that I've found that is simple and has actualy OPTIC.
Thing is though, what kind of power does it require? 5V, 12V? If it's 12V then it's all good, but if it's 5V that means that we will need to put the inverter in and that thing is just noisy
I'm also looking at this card:

it's much shorter and doesn't require any external power, which is a big bonus

Well, the audigy takes 1.5A of 5V power, so that's a difficult one :S, too much for most simple regulators (7805 style).
I have it hooked to my opus'es 5V rail and it performs awesome!
If you only need the optical out, maybe you should try the Creative SB MP3+, which is an external card, but only uses the usb for power (so 5v, less then 500mA). Analog in/out is only stereo, but it has optical in/out
Your setup looks really nice, nice car too!
