This should work in 2000, though I dont have one near me to try right now, but in XP you need to add the /noguiboot switch in the boot.ini.
Open boot.ini in notepad, and add the switch like this (note mine is for xp and looks slightly different):
multi(0)disk(0)rdisk(0)partition(1)\WINDOWS="Microsoft Windows XP Professional" /fastdetect /noguiboot
Like I said, I have not tried with 2000, but it should work.
