You could do this with a virtualization program like parallels. Setting up the two screen with separate outputs will require some hardware, a dulahead2go or a VT Book (see: sewelldirect.com). As for audio, you can use the mini's audio output for the front, then assign a usb audio device to the second operating system running inside parallels (or whatever).
Controlling it all would be a bit of a mess, you could only have one touch screen.
