There are UPPD (Universal Pointer Device Driver) (Touch-Based) available and (freely downloadable) for OSX, if the drivers provided happen to not work with your particular application.

First off, a touch screen is emulating a mouse. This technology isn't propriatary, and has not changed. Assuming that it wouldn't work with OSX, is like stating that OSX (or Windows Vista - if you want to use a different application for arguments sake) is superior to everything on the planet, and sees no need to be able to use the traditional mouse that 300 billion other computer manufacturers and computer users are using right now. That like saying someone designed a car that runs on gas available from a station in egypt only. Sure there is software that would be foreign to all other OS's, but not a mouse. The only reason that I can see that a driver for a mouse not be available, would be that the OS has no consumer usage or need for support.

I know I'm over explaining a little like that, but I suppose I'm trying to say that the hardware function is common to a computer, period. The driver, since they have been designed to be, and are available as universal drivers, states that you should have no worries with any OS.
