Good job! Been changing tons of text after reading your findings.
One I have not found is the text for the headers in:
Settings > Display Options
and
Settings > Route Options.
The headers are black, and say things like:
Orientation, Day/Night, POI Icons, Color, 3D view
and
Method, Ferries, Toll Roads, Carpool, Turns
I tried locating these, but no luck
