OK, tried a couple more things today...
First, I pulled the dead-man timer jumper, thinking that perhaps a low-voltage situation was occurring just after turning off the vehicle which would cause it shut down as a safety precaution, but that made no difference.
So then I ran the truck for a few minutes then turned it off, measuring the battery's voltage the whole time. While the truck is running, the alternator is putting out a healthy 14.3V, and when the truck is turned off, the battery's voltage drops (as expected) slowly and smoothly to 12.62V and stays there - never comes close to 10.6 (the cutoff voltage listed in the P1900 manual).
