Yeah I unhooked the 12v each time I changed the settings. It appears that it only does the 5 sec off when I switch the power off/on/off as I stated above.
But then, I just found this diagram on the manufacturer's site. If you see the ignition line it does indeed require off/on/off. Perhaps a car DOES operate like that?
