I'm not sure. The touchscreen driver is probably fixed. If not, I'm sure it is fixable since the source is right there (Hack it until it works on your hardware then create a patch incase you upgrade).

I do not use a touch screen nor do I use anyone else's frontends. So, someone else will have to help you with that one. XBox runs linux fairly well and gentoo runs just fine on it. I am unsure of running wine on the Xbox. It should run, but I can't guarantee it will perform as you wish.
