I work for a company that has had a great deal of work to do with voice control.
We use dragon and via voice here, we work in plant rooms and have had not much problems with bg noise. This is because you have to train it in the enviroment you'll be using it in.
It might sound extream but I'd recommend getting a mate to drive the car and then reading the calibartion scripts while driving around, the only draw back is that you have to have a screen of size to beable to read the script(s) and it takes about 2 hours to get it up to the level of being able to dictate, but by the sounds of it you dont need that level, so around 20mins should be plenty epecially if you set up a grammar file, which lets to record up to 40 different variations of the same word, for example words you'd use heaps like open and close, you could almost always get them on the first try if you set up the grammar.
