I'm running Apexi PowerFC Aftermarket Standalone ECU on my car. Last year a guy from RX7 community made free software named FCWatch for Apexi PFC but the project dead in the end.(may be the coder dead)

Here are some screenshots.
FCWatch was communicating through RS232. The ecu and its protocols has already been hacked by the rx7 community (rx7 guys working really well  )

We would definitely be interested in supporting aftermarket ECUs. But we would need some sort of specification or technical details about these ECUs to implement the support. Does anyone have this information?

What type of information do you specifically need?
PFC doesn't come with a software or any cable for tuning. Tuning is only a dealer job. It does also ignores the OBDII port so you wont be able to use OBD anymore.
So how do you communicate with PFC? There are some 3rd party softwares and hardwares in the market. One of the favorite one is Datalogit

Live tuning and live monitoring is possible via RS232 port so you dont need OBD port anytime.
All the Protocol Descriptions are described here. So all you need is a good looking software.

My elm327 unit final turned up on the 'slow boat from China' today. I hope to test it in the car tomorrow and will download Dashcommand on to the laptop in a minute.
I guess I'll find out tomorrow but is it easy to change between screens using Dashcommand embedded in RoadRunner i.e. using asmbpm's fantastic gauges?

I'm getting ready to purchase my OBDII package, but I need to know if I buy the ScanXL, do I need the DashCommand as well? I want the ScanXL for tunning and diagnostics, but also would like to do a Custom Gauge Cluster to replace my gauges

Since DashCommand is designed with custom gauge functionality in mind, it is not ideally suited for tuning and diagnostics. So I would recommend that you get both ScanXL (for your tuning and diagnostics needs) and DashCommand (for your custom gauge cluster project).
However, since ScanXL does include support for DashXL dashboards, you may be able to use just ScanXL. Of course, when you see the new features we are adding to DashCommand, you will want both.

I am running PCM Scan and have loaded those GTR screens, which incidentally look great.
Can someone walk me throuh the process of making them work?
What do I do with the psf files?
Will those scripts work with my Ford?
Any help would be greatly appreciated.

You have to select correct PIDs to monitor them, according PIDs are programed in gauges. You can see what PID are using every gauge with DashXL Editor.

You will have to adjust for you parameters of your car.
For example, SCRIPT.FUEL calculate how many fuel liters remaing in fuel tank, but it's calculated for 61 fuel liters tank capacity (Mazda RX-8 fuel tank capacity). You will have to change those parameters to adjust gauges to your car.
