You'll need to install your own sensors and your own monitoring system. I suggest the
Innovate Modular Tuning System.
With that you can daisychain several modules together and hookup lots of sensors. You can monitor using their own gauges, a windows CarPC, or a standalone gauge system like
DashDAQ to view the data from the daisychain. Their modules have plastic cases (bad) but have mounting flanges and decent connectors to do a clean job on wiring (good). Also they a wide variety of modules that can measure temperature, voltage, and plenty of stuff on an old car.
